Talking about the jobs that AI has destroyed, what about the poor guys who dropped out and made their money by writing essays and research papers for rich kids who were still enrolled that I see in lots of movies dealing with university life. Those guys I bet don't have any sort of business anymore.

Adopt the Scandanavian model: studying is done outside of the class (at home, or wherever it can be done), work/assignments are done in class. Essentially the teacher only stands up and addresses the class if they see a persistent subject issue that needs addressing across multiple students. Otherwise students are working on their homework in class every day, to allow the teacher and high performers to wander and assist other students as needed.

This allows the classroom itself to completely ban any ability to access AI while doing homework/assignments, while the studying itself has access to AI in order to assist with subject questions for clarification or deeper dives.
