NixOS 26.05 Released

One *major* highlight (for anyone that hadn't kept an eye on the `*-unstable` channel(s)) is that support for `x86_64-darwin` (Intel Macs) is deprecated and will be fully unsupported in the next release (starting NixOS 26.11).
